
As a child our friend Linda made the most desirable cookies for the holidays They were these soft sugar cookies which my family would fight over and devour. Usually it was a holiday that brought a batch to our door but sometimes it was just a show of love and concern. I wish you could taste these. Anthony and I decided for Easter to try and capture our childhood memory and make them. THEY WERE AWESOME!!! I wish I had a photo of all the ones I painted but here are the ones Salina made... yum! Mine had dounble the frosting:)
Linda Peck Sour Cream Sugar Cookies
3 ¼ c. flour
1 tsp. baking soda
½ tsp. salt
½ c. butter or one stick butter
1 c. sugar
1 egg
1 tsp. vanilla
¾ c. sour cream
Cream butter and sugar for a few minutes. Add in vanilla and egg combine for a minute. Add in sour cream blend. Add in salt and soda blend. Add in the flour and mix. The dough will be a little sticky. Put in fridge and only get out small amounts to roll out. Use flour and a rolling pin and roll to ¼ inch thick. Cut with cookie cutters. Bake at 400° for 5 minutes to 12 minutes on the middle rack. (Mine is 395° for 5 minutes). The cookies will brown a little on the bottom but not at all on the tops. They will be soft.
Frosting 1 LB powdered sugar
1 stick butter (or a little less depending on how you like to spread it)
1 TSP vanilla (a little milk if needed)
DOUBLE BATCH used most often…
6 ½ c. flour
2 tsp. baking soda
1 tsp salt
1 c. butter
2 c. sugar
2 eggs
2 tsp vanilla
